Abstract

Comparative study of composition of storage proteins in the endosperm of initial varieties of soft wheat and mutant lines, obtained under the action of surfactants was carried out. Analysis of the structure of high-molecular weight glutenines (HMWG) from the mutant lines of Kazakhstanskaya 3 variety reveals emergence of HMWG with lower electrophoretic mobility. In the mutant line of Shagala variety difference of HMWG structure on Glu B1 and Glu D1 loci is also revealed. The range of storage proteins according to gliadines is basically stable, what testifies high genetic stability of the mutant lines.
